Citrus fiber is used as a phosphate replacer to provides high water holding and emulsification properties which are key in creating high quality processed meats.

Description:

This product is a dietary fiber ingredient produced from high quality citrus peel.

Properties:

  • Appearance: Beige powder, odourless and tasteless.
  • Applicaton: For emulsion systems, for improving water holding capacity of food systems like meat products, and for general fiber additon.
  • Typical Dosage: 0.2-5%
  • Solubility: Dispersible in water, milk and oils. Insoluble in water, oils and organic solvents
